Ever since the contestants on Master Chef made apple pie this past week, I couldn’t stop thinking about apple pie. . .for breakfast, lunch, and dinner . . . with ice cream.
So today I made apple pie!!!
I started by peeling, coring, and dicing apples into thin pieces. This is almost worst than shaving your legs. . .or your beard, if applicable. . . It’s time consuming but so necessary. Toss them in some lemon juice.
Make the filling by melting some butter, adding flour, water, sugars, spices, and salt. Cook until very thick in consistency. Stir in some vanilla and pour the mixture over apples. Mix with the apples very well.
Pull your crust out of the fridge and lay into the pie plate. If you feel a little extra ambitious, make your own crust (click here for my How I Make Pie Crust) or use store bought. Pour in the apples, reserving about a tablespoon of the juices at the bottom of the bowl.
Make the lattice crust by cutting second pie crust into strips. . .because it’s pretty. Or you could just lay the second crust on top and make some vent holes. . .but it wouldn’t be as pretty!! Here’s a video on How to Make a Lattice Crust.
Pinch the lattice pieces and bottom crust together and tuck it under inside the pie plate. Press the edges with a fork.
Sprinkle with cinnamon sugar. Place onto a baking tray and bake until the crust is golden brown, at least 1 hour. Mine took 1 hour and 15 minutes.
Remove from oven and let it cool. Don’t you dare cut into this for AT LEAST 2 hours.
