My mom always made a few different types of cheese balls around the holidays. I would steal one of them and a box of crackers and disappear into my room. . .I know, I know, my issues started early!!!
This is the first time I actually made one instead of buying one….and we may or may not have had this for dinner because we could. not. stop….
It’s really easy to make but you need to make it a day ahead so it has a chance to set.
Mix cheeses, bacon, ranch seasoning, and green onion in a bowl. Make sure the cream cheese is at room temp or it will be impossible to mix.
We buy ranch seasoning in bulk at Costco ’cause we use it like crazy.
Add in the smoked paprika. I also buy this in bulk because I use it like crazy.
Mix this together.
Cover and put in the fridge for 30 minutes.
Meanwhile toast nuts. 350 degrees until toasty, about 5-7ish minutes. Watch them so they don’t burn.
Set aside to cool and chop them up.
After the cheese has been in the fridge for 30 minutes, kurplunk it out onto some plastic wrap and shape it into a ball.
Put in the fridge for another 30 minutes.
Remove the plastic wrap
and roll it onto the chopped nuts and press evenly all over until covered entirely.
Wrap tightly with plastic wrap and refrigerate overnight to get married and set. Serve it up with some crackers and enjoy!
