We eat this once a week and this was our dinner tonight!!! It’s healthy, easy, and delicious!
It’s not really a recipe but a matter of tossing a few ingredients in the crockpot and calling it good! A few cups of mushrooms, a good galunk of red wine, and a jar of your favorite spaghetti sauce and you’re good to go. I used a combination of chopped baby bella and button mushrooms here because I had both, but usually I use just the buttons.
Set your crockpot on low, put the lid on, and it’s warm in 4 hours. I’m a spoiled rotten brat and have the privilege of working so close to home I can come home at lunch and get it started so it’s ready by the time I get home from work. The only thing to do is boil the pasta which only takes a few minutes.
The only whole wheat pasta that we found doesn’t taste like you’re gnawing on a gritty leather boot is the Delallo brand capellini.
And to go against what you’re Italian mother always taught you, make sure you don’t mix the pasta and sauce….instead, add the sauce on top of you’re heaping pile of noodles. . .This really is the only time I do this because I feel like I’m committing a crime. Just kidding, it’s usually because I’m starving and don’t care!!!
This really has endless possibilities. If you are a weirdo and hate mushrooms, use another veggie like chopped zucchini, onion, spinach, or all of the above!!! You are the captain of your own ship! 🙂 🙂 🙂 🙂
