The best part about this dip is that it is easy and healthy. There’s no heavy cream or cheese in this either!! I know! I shocked myself that I had the ability to refrain from grabbing the parmesan!!! The beans show off by making this dip nice and creamy and smooth. It has a similar texture to hummus, like cousins.
Roasting garlic is the simplest and best thing ever. It makes your house smell wonderful and the garlic becomes mellow and sweet. All you need to do is cut the tops off, drizzle with a little olive oil, a sprinkle of salt, cover with foil, and bake for an hour.
When it’s cool enough to handle, squeeze out the cloves and rub them all over your body. I mean….squeeze them into a mini food processor. Add in the rest of the ingredients and pulse it until it’s a smooth consistency.
This is a very inexpensive recipe too. Garlic is cheap. A can of beans is cheap. All the ingredients I usually have on hand 9.5 times out of 10 which is why I came up with the recipe….not because I wanted to eat a loaf of warm, toasty, crusty, ciabatta bread. Who does that.
