Dammit. I seriously just ate half a loaf of bread and I regret not tripling the recipe!! You have to try this! Don’t be scared of the jalapeños because you don’t want to burn your mouth off…Roasting the jalapeños and adding a little honey mellows out the spice to a whole new level of badassery.
Roast the jalapeños for 15 minutes. Then put them in a plastic bag to steam. When cool enough to handle, peel off the skins, and scrape out the seeds and ribs.
In a mini food processor, combine peppers, extra virgin olive oil, honey, red wine vinegar, nuts, garlic, and salt.
For a killer toast spread, broil some ciabatta slices for a couple of minutes. Smear softened cream cheese onto the toasts and top with some of this pesto.
This is easy and fast to whip up (I even had time for a nap afterwards), healthy as shit, and delicious!!! There are so many ways you could use this too. You could mix it into mac and cheese, or as a pasta sauce, add it to tacos, enchiladas, homemade pizza, add to any meat that exists really!
