Dinner in less than 15 minutes and clean up in 5 seconds. This is my kind of dinner!!!!!
Use a fresh (NOT farm raised) center cut salmon filet, whatever size of filet that suits your appetite, preferably with the skin on.
Sprinkle the fish with salt and pepper, add some cherry tomatoes, capers, fresh basil, juice from half of a lemon plus two lemon slices, and sprinkle with some more salt and pepper. Also….make sure the fish has been out of the fridge for 15 minutes before you put it on the grill.
Make sure you use a heavy duty foil too, not the cheap shit you get at the dollar store that tears if you look at it wrong. Bring the tops together and fold a few times, then tuck in the sides to seal it. Put it on the grill for 12 minutes. If you don’t have a grill, put it in a 400 degree oven and bake until cooked through, 20-25 minutes.
Mine came out perfectly moist and delicious!!! Be careful when you open up the packet or your face will get blasted with hot steam… Sprinkle with some more fresh basil… Oh mannnnn, I love capers. I regret not using the whole entire jar….
You could totally add veggies to the pouch too, I would use asparagus or some zucchini…or any veggie that would cook in that amount of time.
