This weekend I had the best breakfast burrito ever from Taco Mex. You can too…but you have to go to east Colfax. For less than 9 bucks, we got two fat & perfect in every way burritos. Laawwwd have mercy.
The Chihuly exhibit at the Denver Botanical Gardens is definitely worth seeing! Blown glass structures are throughout the gardens, peaking through foliage, and placed strategically throughout the ponds. It’s here until November so we will be going back again at night to see these works of art lit up. We went at the perfect time (8:30am) before the lines and crowds of people arrived to photo bomb my photos and before the sun could light my skin on fire. Sometimes it’s hard being 0.25 Norwegian.
Sometimes I feel like an old lady because of my undying love for egg salad….with avocados. Tweek it how you like. I left out the mayo, yogurt, and vinegar, used lime juice and mustard instead and made an egg salad lettuce taco. I wasn’t sorry.

Cherries are $2.48/pound at Sprouts. Eons ago (meaning last June) I made this cherry crumble and it was great! In anticipation of cherry season I have been gathering naughty recipes on Pinterest to possibly try. Although, I’m perfectly content mowing a whole bowl of them down in a dark closet somewhere by myself. That isn’t awkward at all.

And one more thing….If you go to the Home Depot in Highlands Ranch (the one over by Town Center) it is a necessity to get a hot dog at the stand out front. Necessity. There’s always a line. And once you have one, it’s obvious why. Joe had the Chicago dog and I got the California surfer. They were inhaled in less then 60 seconds.
